Baking...


I guess I've had a streak of baking in me this week because I baked some more cookies, this time very unhealthy chocolate chip ones, this afternoon with Autumn and Gavin. We had loads of fun and lucky for you I did take some pictures!!! Pictures always make blogs more fun to read! :)

Autumn and Gavin took the cookies around tonight with their grandma to a couple of our neighbors we know.  We also have some saved for the mailman tomorrow. A new family is moving in across the street and we are trying to get to know them along with our other neighbors.

Learning from my niece...

Ok, so I have this niece, Autumn, who lives with me. She is five years old and thinks she knows everything...typical. The other day when we were cooking dinner she asked to help. We were making chicken roll ups. She decided to help me pop open the cans of crescent rolls, pinch them together, put chicken mix in them, roll them in bread crumbs, and put them on a cookie sheet. Now I haven't made these in forever so I had to get the hang of it but she was already ahead of me telling me that I had it all wrong and that you have to 'pinch them together first!' Oh dear, excuse me! So after watching her do a couple, I decided to try my hand at it and sure enough I could! Wow! What do ya know!! It was fun because she was the pincher, roller, and putter on cookie sheeter and I was the popper and put chicken mix oner. :)




There is never a dull moment with her either. Between her and Micaiah, there is always something to laugh about, something to keep you awake! She loves to sing, dance, and do sign language with everything she does. Whenever she goes to sleep, she tells herself stories and sings herself songs. When she's in the bathroom she is singing her little heart out and you can hear her from a mile away! At every gathering she gets out in the middle and does sign language to the songs we sing and every other little girl goes out too and copies her. Even some of the adults copy her signs too. :)
The other morning it was hot so we put a fan in the open window and she was standing by it singing into it. She was singing "Mighty to Save". She started singing it..."Everyone needs compassion, love that's never failing, let mercy fall on me..." and she stopped there. She kind of looked confused and said, "I don't want mercy to fall on me." We all looked at her wondering where her little brain had taken her. Then she said, "She's too heavy." She was dead serious too. We all burst out laughing!!! It was totally a classic! She says funny things like that every day.
I have been meaning to do something fun with her and her brother but haven't had the time. The other day when I watched them I couldn't give them my full attention or take them on a walk like they wanted me to because I was making my dad's juices with my mom. Their mom was going to make banana cookies this morning for breakfast but didn't have time so I decided that was a good idea for tonight! I had them find the recipe and get out all the ingredients. My nephew Gavin mixed up the dry ingredients and Autumn did the wet. I pretty much didn't do anything besides remind Gavin that we needed two teaspoons of salt not two tablespoons. I thought about taking pictures of them cooking in their aprons but I was in the thick of things too so I couldn't. Since their mom was at a meeting, I let them stay up a little later than usual and we all sat at the table dipping our cookie in a cup of cold milk! It was a nice treat!!! :) While we were eating them I said, "these cookies are so good it isn't even right!" She looked at me and asked, "why isn't it right?" That was a hard one to explain...


Remember that time of your life when there was that someone that you looked up to, loved, and did everything they did? Well, I do. But now I am older and there are younger ones, Autumn for example, who now look up to me. It is a very scary feeling to always have someones eyes on you, saying everything you say, doing everything you do...For example...my younger brother Micaiah knows everything that annoys me and always seems to be doing those things. I get annoyed easily when it comes to him so I am always asking him to "please stop" especially when he's singing during school hours. I think it has become a habit for me to say that to him because the other day he walked in the kitchen and I asked him to "please stop" then realized that he hadn't done anything. So Autumn, seeing and hearing everything, now asks Micaiah to "please stop" too. Yesterday he was outside in the backyard singing and the window was open. Autumn crawled up on the couch, put her face against the screen and asked him to "please stop". That is only one of the many little things she has picked up from me. It is good I guess because it makes me want to be and do better for her sake. It makes me watch myself and catch things before they exit my mouth.

Banana bread recipe

My house now officially has the stomach flu...well, Autumn does but it won't be long until the rest of us get it too. :( Ayala isn't feeling too good either but doesn't have the flu. Next door has it really bad. So with all the sickness coming and going all the time, it is a good idea to stay away from sugar. I was in the mood to make some banana bread today that everybody could eat, whether they are sick or not, so I searched around and found a recipe and added a few things to it. I made it and it turned out really good! Everybody loves it!!! (that's what counts)


Here is the recipe I used...

~Sugarless Banana Bread~                               Makes 1 loaf
2c. flour
1tsp. baking soda
1tsp. baking powder
1/2 tsp. pumpkin pie spice
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 ripe bananas
1 (6oz.) can frozen orange or apple juice concentrate (I used apple)
2 eggs
1/2 tsp vanilla extract
1/2 cup raisins
1/2 cup nuts

Stir together first six ingredients in bowl. In a different bowl, mash bananas then add next three ingredients. Add wet ingredients to dry ingredients along with the raisins and nuts. Mix until just blended. Spoon into a greased 9x4 inch loaf pan and bake in 350 degree oven for 35-40 minutes.

Note: you can take out the nuts, raisins, and any of the spices if you prefer. It is all a matter of preference.

Recipe

I was too busy yesterday to blog, plus I wasn't home yet. Nothing much happening today; everyone's shopping or fishing here.

Here's the recipe for the Healthy (Sleepless) Muffins for those of you who told me you wanted it. :)

1 c. whole wheat flour                                Serves 18
1/4 c. wheat germ
3/4 c. oatmeal
2 T. cinnamon
1 t. salt
2 t. b. powder
1 egg
1/4 c. oil
3/4 c. milk
2/3 c. honey
1 banana
3/4 c. raisins

Mix the first six ingredients together in a bowl. Then mix egg, oil, milk, honey and banana in smaller bowl. Add to first six ingredients and mix. Next mix in the raisins. Spray muffin tins with non-stick cooking spray then spoon in the mixture until tins are 3/4 full. Bake at 325 degrees for approx. 20min.

I can't sleep :(

Ok, I got in bed at 11pm and layed there w/ my eyes closed for one hour. I couldn't go to sleep worth anything! So I decided to get up and make the most of it. I made my bed, finished packing for an upcoming trip (today) and read the Bible. It was now 1am and I still wasn't tired, so I decided I felt like baking. So I went in the kitchen and found an easy healthy muffin recipe. So now here I am; my muffins are cooling and I'm still not tired!! I think what's wrong w/ me is that I've been sick for the past three days and I've been sleeping nonstop, so my body is telling me that it is on overload when it comes to sleep. Last night I layed in bed for two hours before my body finally gave in to sleep. It's crazy!!
Now that you've read my nonsense stuff, I'll let you know a little of what's going on out here in Memphis. I won't be able to blog later on today because I'm leaving at 9am to go to Cumberland Caverns somewhere in Tn. I'll be leaving my house between 6 and 6:30am to go to Selmer, Tn (where I used to live). We are going to be staying overnight in a cave!! Kinda scary!! We'll be back tomorrow afternoon. So I'm going to stay all tomorrow and half of Saturday and then coming back home Saturday after lunch. From there I've got to sew my dad's mantle! Wow! The ladies out here are doing tons of things to get ready for all the upcoming events that r taking place soon. We have two weddings, one in a week and the other the second weekend of October, an Ingathering, and a passage. I still don't have anything to wear to any of those events :( We are going to be doing a lot of driving throughout this month!
It has been very frying lately between school, planning the menu, attending every event, sewing, shopping for material, shopping for nice clothes...and the list goes on. I haven't been able to help w/ anything really because of my sickness. Today was the first day since Saturday that I've been up for breakfast and have been able to teach and cook.
Before I'm done blogging I wanted to let everyone know that today's my mother's birthday!! We are going to celebrate it in a week though since we'll be out of town today.
Well, I guess I didn't really have anything to write. Oh well, I said I'd try to write everyday. Next time I'll tell what's going on more w/ everybody else. I'm not totally tuned in w/ them right now because of how out of it I've been. :)
